Yeah, you probably could.... But I would line it with some plain fabric (I'd suggest a natural linen or off white), as 5.31 oz. linen is a tad on the light side for leg coverings. I usually try to stick to 7 oz. or heavier for leg coverings (so I don't have to line them).

To be honest fabric-store.com tends to be the best place to get linen fabric from... Other sources I have, but most of them are not better... And most of them don't have cross-bar checks in any heavier of a weight of fabric.

But try.... http://www.periodfabric.com/

Or http://www.denverfabrics.com/

Or http://www.burnleyandtrowbridge.com/

Or http://www.wmboothdraper.com/

I think that is the short (and usually entire) list of fabric dealers I will buy linens from.

I have a few yards of that exact fabric sitting on a shelf in my sewing room waiting to become a sailor's shirt... But again, from handling that fabric, it is a bit light for breeches, unless lined with another layer of linen. But it is about as close to cross-bar checks as one can find at a reasonable price as I have seen.... So I am a fan of that particular fabric.
